Meet "Paleo Doge" and a recipe for Bacon Burgers with Apple Green Chile Relish

Okay, so have you heard of the Doge meme? Upon first glance, it is completely ridiculous, but there are some that are seriously hilarious like this one...

So naturally I had to make my own Paleo Doge! I really just made it to cheer Kevin up on a bad day and it worked so I decided to share it with the rest of the world. Meet my new little Paleo Doge!

Now that you've had a good laugh, let's get down to business. I'm talking serious burger business. For the past few weekends, Kevin and I have been coming up with all these fun new burger flavors so now we've officially deemed Saturday night "Fun Burger Night". I am trying my best to keep track of our creations so I can share them with you, but it is proving a difficult task because we pretty much make them up as we go. I made sure to write this one down, though, because it was out of this world good! 

We started with a basic burger and topped it with raw cheddar cheese, crispy bacon and a warm, sweet and spicy apple and green chile relish. On the side we had my Chipotle Lime Coconut Slaw. Do you have a favorite burger combo? Let me know in the comments!

Bacon Burgers with Apple Green Chile Relish
Serves: 4
Time: 40 Minutes

For the burgers:
1 lb ground beef
1 tsp garlic powder
Dash of salt and pepper
4 strips uncured bacon
Raw cheddar cheese, optional

For the relish:
2 roasted green chiles, seeded, peeled and diced (or 1/4 cup diced green chiles from a can)
1 green apple, diced
1/2 red onion, diced
Juice of 1/2 lemon
Salt and pepper

For the burgers:
Mix ground beef and all spices in a large bowl until well combined. Form the beef into four patties.

Heat a grill pan over medium heat. Once hot, place burgers on the grill pan and cook for eight to ten minutes (to desired level of doneness), flipping after five minutes. You can also cook on an outdoor grill for about the same time. Optional - If topping with cheese, place cheese on burger for final two minutes of grilling.

While grill is heating, heat a skillet over medium heat. Once hot, place the bacon slices on the skillet. Cook until crispy, turning often, about 8 minutes. Remove bacon from the skillet and set aside on a paper towel lined plate. Discard or save bacon grease, reserving a couple tablespoons in the pan to cook the relish.

Turn pan to medium-low heat. Add relish ingredients to pan and stir well. Cover and cook for 10-15 minutes while burgers are cooking, stirring every few minutes. 

Top burgers with bacon and relish. Serve with slaw.
