Easy Slow Cooker Pulled Pork

I almost feel bad calling this a recipe...almost. There was a time not too long ago that if somebody had handed me a pork shoulder and asked me to cook it up for them, I would have looked back at them with a blank stare. So there must be other people out there looking for easy instructions to cook delicious pulled pork. I can't be the only one, right? 

It was actually Kevin who came up with this recipe. We used to just throw it in the slow cooker and let it cook overnight. Then, one magical day, Kevin added bacon to the mix. He lined the bottom of the slow cooker with bacon before placing the pork shoulder in and then finished it all of with a generous sprinkle of salt and pepper. This simple step added SO much flavor!

We use this pulled pork as the base for a bunch of meals that we make all the time like this Hatch Green Chile Breakfast Casserole and these Balsamic Pork and Apple Stuffed Sweet Potatoes. I also like to throw some on top of a salad or serve it on baked apple slices...yum!

Easy Slow Cooker Pulled Pork
Time: 8 hours
Serves: 6-8

4 strips of bacon (we use Trader Joe's Uncured Bacon)
3 lb pork shoulder
Salt and pepper

Lay bacon in the bottom of your slow cooker. Place pork shoulder on top of bacon slices and wrap bacon around pork shoulder. Sprinkle with salt and pepper.

Cook on low for 8 hours and shred with a fork.
