Awesome Paleo Avocado Toast and Toppings


I have to admit that I experience a little bit of Paleo jealousy from time to time. What is Paleo jealousy? Well, it is the little twinge of envy that I feel when I see a new food or recipe that I wouldn't typically eat, but it looks SO good that I can't stop thinking about it. For example, CRONUTS! I know that just one cronut isn't going to kill me, but I'm not the kind of girl who could just eat one cronut (are there people who can?) so I know it is better for me to keep my distance. And if I had a cronut, wouldn't I have to then try a cheeseburger on a cronut? Yeah, thats a thing.                         

So, when I started seeing avocado toast recipes everywhere I was a little bit sad that I may never get to experience it. I knew that a piece of toast spread with soft, buttery avocado must taste amazing. I have a small obsession with avocado. I literally have avocado at least once a day, sometimes more. I haven't eaten bread in almost three years, though, so I thought avocado toast would forever be a tasty dream.


Instead of sitting around and wallowing in my Paleo jealousy, I decided to come up with a recipe for Paleo avocado toast! Considering the fact that I write a recipe blog, you think I would have come up with this idea sooner, but better late than never, right? 


This recipe starts with a buttery coconut flour pancake as the "toast". These pancakes are super easy and have only four ingredients! Next up is the avocado mashed with lime juice, salt and pepper. Then comes the fun part - the toppings! You can add any toppings that you want. I went with diced tomatoes and pulled pork. This would be delicious with a runny egg or a sprinkle of crumbled bacon. You can really get creative with it and make your own creation.

Awesome Paleo Avocado Toast
Time: 20 Minutes
Serves: 2 (2 pancakes each)

4 eggs
3 tbsp coconut flour
Salt and pepper to taste
1 tbsp ghee (plus more as needed)
1 avocado
1 tsp lime juice
Optional Toppings - Eggs, diced tomatoes, pulled pork, bacon, spinach, etc.

Whisk eggs together in a bowl. Stir in coconut flour until mixture is thick and smooth. Stir in salt and pepper.

Heat ghee in a skillet over medium heat. When ghee is melted, add about 1/4 cup of the batter to the pan. Cook for 2-3 minutes, until golden brown on one side. Flip and cook for about 1 minute on the other side. Remove from pan and repeat with remaining batter (add more ghee if needed). Should make 4 pancakes.

Mash avocado to desired consistency in a small bowl. Stir in lime juice, salt and pepper. 

Spread avocado over pancakes. Top with desired toppings and serve.
