A Trio of Date Ball Cookie Bites - Mint Chocolate Chip Cookie, Cocoa Coffee Bliss and Oatmeal Raisin Cookie


These were inspired by my love of cookies and the fact that my sweet tooth is quite demanding and I try to indulge it at least once a day. And, why shouldn't I? With tasty, simple treats like these it is totally fine to savor a few of these tasty bites every once in a while. These are made with only a few REAL food ingredients and they are naturally sweetened by the dates. No refined sugar here.

So, which is your favorite? Mint Chocolate Cookie Bites, Cocoa Coffee Bliss Bites, or Oatmeal Raising Cookie Bites? I think my answer is "All of the above"!

Mint Chocolate Cookie Bites
Makes: Approximately 16-18 bites

Ingredients
½ cup almonds
½ cup walnuts
1 cup pitted dates (about 15 dates)
1 tsp vanilla extract
4 drops peppermint extract
3 tbsp unsweetened cocoa powder
Dash of sea salt

Directions
Add nuts to food processor with the chopping blade attached. Process until finely chopped into small bits. About 30 seconds. Remove from food processor and set aside in a bowl.

Add dates, vanilla, peppermint extract, cocoa powder and sea salt to the food processor. Process on high until the mixture forms a paste. About 1 minute.

Add nuts back to food processor and process until mixture is well combined. About 1 minute. 

Pour the mixture back into the bowl and, using your hands, form the dough into 1-inch balls.

Serve immediately or refrigerate until ready to serve.

Cocoa Coffee Bliss Bites
Makes: Approximately 16-18 bites

Ingredients
½ cup pecans
½ cup walnuts
1 cup pitted dates (about 15 dates)
1 tsp vanilla extract
2 tbsp unsweetened cocoa powder
3 tsp instant espresso grounds 
1 tsp cinnamon
½ tsp nutmeg
Dash of sea salt

Directions
Add nuts to food processor with the chopping blade attached. Process into a fine powder. About 30 seconds. Remove from food processor and set aside in a bowl. 

Add dates, vanilla, cocoa powder, coffee grounds, cinnamon, nutmeg and sea salt to food processor. Process on high until the mixture forms a paste. About 1 minute.

Add nuts back to food processor and process until mixture is well combined. About 1 minute.

Pour the mixture back into the bowl and, using your hands, form the dough into 1-inch balls.

Serve immediately or refrigerate until ready to serve.

Oatmeal Raisin Cookie Bites
Makes: Approximately 16 to 18 bites

Ingredients
¼ cup pecans
¼ cup cashews
½ cup walnuts
1 cup pitted dates (about 15 dates)
1 tsp vanilla extract
1 tsp cinnamon
Dash of sea salt
½ cup raisins

Directions
Add nuts to food processor with the chopping blade attached. Process until finely chopped into small bits. About 30 seconds. Remove from food processor and set aside in a bowl.

Add dates, vanilla, cinnamon and sea salt to food processor. Process on high until the mixture forms a paste. About 1 minute.

Add nuts back to food processor and process until mixture is well combined. About 1 minute.

Add raisins and pulse just a few times to combine.

Pour the mixture back into the bowl and, using your hands, form the dough into 1-inch balls.

Serve immediately or refrigerate until ready to serve.




Notes:


  • A high quality blender (ex. Vitamix) can be used in place of a food processor.
  • Nuts can be substituted with any variety you have on hand.
  • If dates are dry and mixture does not form a paste, add water, 1 tsp at a time until paste forms.
